Pancake Mix
6 c GF flour mix*
1/2 c sugar
1 T baking soda
2 T baking powder
1 T salt
Mix well in a large airtight container or gallon ziploc bag.
*I use a ratio of 3/4 c tapioca starch to 1 c rice flour. While not the most nutritious mix, it has a very smooth, non-gritty consistency!
Pancakes
1 c. dry mix
2 eggs
2 T oil
1/2 c sour cream or plain yogurt*
1/4 c water
Mix well and cook on griddle heated to 325'
*For dairy free add 1/4 c VANS DARIFREE and omit sour cream
Berry sauce (as far as I'm concerned you can't have pancakes without berry sauce!)
1c water
2 T cornstarch
1/4 c sugar
1 T lemon juice
Mix ingredients in medium sauce pan. Stir over medium heat until mixture comes to a boil and thickens. Turn heat to low and add 1-2 cups berries of your choice (fresh or frozen is fine). If using frozen berries leave on heat until they have thawed. Serve over pancakes
Sloppy Joe Pie
1 lb ground beef
1 8oz can tomato sauce
1/4 c water
1 pkg sloppy joe mix (McCormicks is GF)
3/4 c pancake mix
3 eggs
1 c milk
Heat oven to 375'. Brown ground beef. Add tomato sauce, water and sloppy joe mix. Pour in bottom of round cassarole dish. Mix together remaining ingredients and pour over top of meat mixture. Bake 35 minutes. You can also do individual portions in a cupcake pan to use in lunches. Also if you like more crust double the pancake mixture or if you like a thicker crust reduce amount of liquid.
** Get creative! You can use this like a bisquick mix to top chicken pot pie or stew. Experiment and tell us what you come up with!
